King Trumpet Oyster

KING OYSTER (pleurotus eryngii)

These mushrooms are much larger than the rest and loaded with nutrition and flavor. Compare to a “scallop” and you will find it best grilled, sautéed, broiled, in stir-fries, soups stews, tempura. This shroom is the ultimate “steak”. Replaces meat beautifully! Vegan delight! Nice replacement for seafood allergies as well. Delish!


SHIITAKE (lentinula edodes)

These wonder shrooms are known for their strong, earthy flavor. Velvety, meaty texture. Delicious smoked in your smoker. The stems are woody so save them for your soup stock. These lovelies can be used any which way.

Mediterranean Oyster

MEDITERRANEAN OYSTER (pleurotus pulmonarius)

This terrific mushroom is an all around mushroom. Creamy and meaty. Does great in all recipes. Definitely a “go to” mushroom as the flavor pairs well with just about any dish.


MAITAKE (grifola frondosa)

The Japanese name for Hen-of-the-Woods is Maitake. A combination of the words mai which means dancing and take which means mushroom. Autumn mushroom and most everyone’s favorite. Absolutely fantastic flavor. Highly medicinal and nutritious.



These shrooms are similar to Oyster mushrooms, but taste much more like a mild Shiitake with a distinct “nutty” taste. Much better texture and flavor than the plain white mushroom. If you’re looking for a bold flavored all around shroom, this is a great choice!
